Pan frying is my favorite cooking method! This looks fantastic, can’t wait to try it.
I whipped this up this afternoon using some of the cumin-rubbed roasted pork shoulder from last night’s dinner. By using the darker meat under the blade, the pork stays moist enough to pan fry and not dry out. I recently came by NW Elixirs hot sauces, which are paleo [sweetened with agave] and delicious! Try the Hott Smoke #3 with this recipe.
- 4 oz cold, cumin-rubbed roasted pork shoulder, thinly sliced
- 1-2 tsp olive oil
- salt & pepper, to taste
- NW Elixirs Hott Smoke #3
- 1/2 ripe but firm avocado
- 1/2 small shallot, minced
- juice of 1/2 lemon
- 1 tsp olive oil
- 2 tsp cilantro
- 2 C romanesco, washed and trimmed
- 2 tsp olive oil
- 2 Tbsp water
- salt & pepper to taste
Start by mashing the avocado in a bowl. Mix in shallots, olive oil, lemon juice, and cilantro. Set aside.
